Hey, here’s a few recipes to try. The first one I got some nice reviews on from those I have shared it with!
Meaty Rice w/ A Kick (or Nearly Spanish Rice)
1 – 2 pounds lean ground beef
1 14 oz can diced tomatoes w/ jalapenos
1/2 a small onion diced well
1 small bell pepper diced well
1 12 oz can mushroom gravy
1 – 2 cups (dried) Minute Rice
1 tsp parsely flakes
1 tsp red pepper flakes (optional)
1 clove garlic (optional)
1 tsp black pepper
Prepare rice according to directions on rice package adding the parsely flakes to the water once it begins to boil. Cover it and set it aside.
In a large skillet brown the meat until no longer pink. The leaner the meat means the less fat you will need to drain before the next step. I use the ground sirloin which is like 90-95% lean therefore really no need to drain. As the meat cooks, it is the perfect time to add any pepper or garlic you wish to add. Next, add in the onion (dried is fine if you cannot get fresh just use about 3 tsp) and bell pepper and simmer for 3 minutes. Add the tomatoes with jalapenos (don’t worry about blazing heat as the gravy will douse this) and the optional red pepper flakes for added heat and simmer for another 5 minutes. Make a clearing in the middle of pan and pour in the can of gravy then mix it into the meat. Stir while simmering for 5 minutes getting all the flavors to meld. After cooking, mix in the rice or serve over the rice.
As a main dish, this makes 3 – 4 servings.
Simple snack kids can even make.
2 flour tortillas
1/2 cup of your favorite shredded cheese
Spread the cheese out onto a tortilla (I use the burrito size) and lay another tortilla on top. Place in microwave for 1 minute. CAREFULLY remove the plate with torillas from the microwave and fold over again.
If desired, precooked meats can be added before microwaving.
